History of flavors

Since it can be remembered, flavorings were used to add zest to our food and pleasure to our lives. From early times, flavorings have been part of a quest to make foods and beverages taste better and make the life more enjoyable.
It was started first with the simple and more accessible flavorings. But through years, we have learned to make flavors from the natural resources. There are many food flavor producers in the world where they study the food and beverage industry closely and develop new flavors every day, to be used in different food applications. The variety of the flavors existing today is fascinating; for instance, there are at least 10 different strawberry flavors in the market today: green strawberry, jam strawberry, creamy strawberry, ripe strawberry, and many more.

What is a flavor?

Over the years, a standard definition has been developed. The Regulation (EC) No1334/2008 defines that “flavors are used to modify and/or improve the odour and/or taste of foods for the benefit of consumer.”

What do flavors consist of?

  • Depending on each flavor, they are created from:
    Flavor Molecules (natural flavoring substances, flavoring substances, artificial)
  • Essential Oils
  • Extracts

What are the different flavor types?

There are three different flavor types:

  • Natural: which exists in nature
  • Natural Identical: which are extracted from nature
  • Artificial: which are made by using a natural resources.

Nowadays, the natural and natural identical flavors are used the most as per the global preferences.
