Discovering Cocoa

The story of cocoa start with discovering the cocoa trees in the rain forests of South America and Amazon. It is said that the first cocoa bean were brought by Christopher Columbus to Europe.

Cocoa Powder

Cocoa powder comes from the cocoa beans. The powder is made from fermented, dried, and roasted cocoa beans, which are cracked into nibs and grounded into a paste containing cocoa solids suspended in near-flavorless cocoa butter. Then, the butter is extracted from the cocoa mass and what is left is the crumbly solids grounded into a fine and unsweetened powder.

Different types of Cocoa Powder

There are main types of Cocoa powder: Dutch-Process and Natural, which come in a variety of colors and different fat content as 0-2% (perfect for diet products), 10-12% and 22-24% for different preferences and food applications.
The difference between Dutch-Process and Natural is that the first one is made from washed cocoa beans by a potassium solution (alkaline solution) for naturalizing their acidity, while Natural cocoa powder is simply the powder taken from roasted and pulverized cocoa beans. The Dutched or Alkalized cocoa power is darker than the Natural due the process of acid-naturalization. Dutch-Process power is also referred to as Alkalized because of alkaline process.

Cocoa Mass

Another product taken from cocoa bean in the cocoa mass. Not everybody is well familiar with the mass, but it is known for the soul of the chocolate.
It is the 100% pure cocoa made from the roasted cocoa beans and grounded into a smooth liquor after the cocoa butter is removed.

Cocoa Butter

It is simple: the fat extracted from cocoa bean, is called Cocoa Butter. It is used in foods such as chocolate bars, fudge cakes, etc. as well as in and beauty products and cosmetics like skin cream.

Cocoa bean has been always considered as a valuable natural product. Even in the ancient times, it has been used as currency by Aztecs and Mayans. Today, Cocoa does not have less value than before; it is the heart for existence of big brands in chocolate industry. The chocolate and cocoa global market size has been valued at USD 43.13 billion in 2017 and it is forecasted to reach USD 67 billion by end of 2025.
