Alkalized Cocoa Powder



The difference between Natural and Alkalized (or Dutch-Process) cocoa powder is that Alkalized is made from washed cocoa beans by a potassium solution (alkaline solution) for naturalizing their acidity and it is usually darker than the Natural powder due the process of acid-naturalization.

Similar to Natural cocoa powder, there are different types of Alkalized cocoa powder which comes in different colors:

  • 10-12% fat content
  • 20-22% fat content

The Alkalized cocoa powder is commonly used in chocolate drink, Pastries and Confectionery.
